El celler neix amb la voluntat d&#8217;elaborar escumosos que reflecteixin fidelment el paisatge del territori, apostant per varietats aut\u00f2ctones, viticultura ecol\u00f2gica i una intervenci\u00f3 m\u00ednima al celler per preservar la identitat de la vinya.<\/p>\n<p data-path-to-node=\"2\">Aquest escum\u00f3s s&#8217;elabora amb un acoblament cl\u00e0ssic de <b data-path-to-node=\"2\" data-index-in-node=\"54\">Macabeu<\/b>, <b data-path-to-node=\"2\" data-index-in-node=\"63\">Xarel\u00b7lo<\/b> i <b data-path-to-node=\"2\" data-index-in-node=\"74\">Parellada<\/b>, varietats tradicionals del Pened\u00e8s. Els ra\u00efms procedeixen de diferents parcel\u00b7les cultivades en s\u00f2ls calcaris de l&#8217;entorn de Sant Sebasti\u00e0 dels Gorgs, on el celler treballa sota criteris de viticultura ecol\u00f2gica i regenerativa. La vend\u00edmia es realitza manualment per preservar la qualitat del fruit i assegurar una selecci\u00f3 rigorosa del ra\u00efm.<\/p>\n<p data-path-to-node=\"3\">Al celler, el most s&#8217;obt\u00e9 mitjan\u00e7ant premsat directe del ra\u00efm sencer i fermenta a temperatura controlada. El vi base realitza una primera crian\u00e7a en dip\u00f2sits d&#8217;acer inoxidable i, en part, en barriques de roure de gran format, la qual cosa aporta m\u00e9s complexitat. Posteriorment es porta a terme la segona fermentaci\u00f3 en ampolla seguint el m\u00e8tode tradicional, amb una crian\u00e7a m\u00ednima d&#8217;al voltant de 20 mesos sobre llies, etapa clau per desenvolupar finor en la bombolla i profunditat arom\u00e0tica. En tractar-se d&#8217;un <b data-path-to-node=\"3\" data-index-in-node=\"512\">Brut Nature<\/b>, no s&#8217;afegeix licor d&#8217;expedici\u00f3 en el degollament, per la qual cosa el vi mant\u00e9 un perfil sec i molt prec\u00eds.<\/p>\n<p data-path-to-node=\"4\">A la copa mostra un color groc palla brillant amb reflexos daurats i una bombolla fina, constant i ben integrada. El perfil arom\u00e0tic combina fruita blanca fresca, com poma i pera, amb matisos herbacis i delicades notes de pastisseria derivades de la seva crian\u00e7a sobre llies.<\/p>\n<p data-path-to-node=\"5\">El pas per boca resulta fresc, equilibrat i elegant, amb una textura cremosa i un carb\u00f2nic ben integrat que aporta sensaci\u00f3 de finor. La fruita madura es barreja amb lleugers records de fruits secs i un fons mineral que perllonga el final, deixant una sensaci\u00f3 neta i persistent.<\/p>\n","protected":false},"excerpt":{"rendered":"<p><span id=\"docs-internal-guid-62cfd934-7fff-89e5-5e53-67c6212a552a\"><strong>Corpinnat<\/strong> del celler <strong>AT Roca<\/strong>, composat d\u2019un 60% de <strong>Macabeu<\/strong>, un 30% de <strong>Xarel\u00b7lo<\/strong> i un 10% de <strong>Parellada<\/strong>. Es fermenta en dip\u00f2sit d\u2019acer inoxidable i en ampolla. T\u00e9 una crian\u00e7a totalment en l\u2019ampolla, durant 24 mesos.
